School Memories and Photo Overload with Make My Book

Our latest Shutterfly photo book came in the mail! This is the biggest one yet, 45 glorious pages of color photos. I never get my kids yearbooks since I had taken a lot of photos being classroom photographer for both of my elementary age kids. But the beauty was in seeing all their school friends in on place and preserving the memories which are so very important. So I decided to make our own yearbook (I’m bias but it’s probably way better than the school issued one), this one is filled with only images of my kids classroom pals, field trips and holiday activities. It has pages upon pages of fun and friends!

The hardest part of this whole thing was remembering my Shutterfly password, using, I create a photo book through the Make My Book Service , I couldn’t believe how easy it was, saved me so much time I don’t have to spare, and out came a professional quality photo book!

I’ve already blabbed about how awesome and easy the Make My Book™ process was, their photo placement and layouts were near perfect, edited out a few photos and only made minor adjustment to make a picture perfect book!

They’re starting to stack up! I just love looking through each books and sharing them with our guests, isn’t that what everyone wants to do?! How many have you made? I have a friend with 15 Shutterfly photo books, makes my 4 books look a little lonely in comparison.

Pumpkin Bowls with Vegetable Soup + Giveaway!

We are crazy for pumpkins, and nothing can make this time of year any better than combining two of my autumn favorites into one, and serving up soup in colorful Pumpkin Soup Bowls! 
Making the bowls is really easy, kind of like making a jack-o-lantern but without the face. Cut and empty the pumpkin, then place on a baking sheet in the oven at 400 degrees for about 20 minutes. Poor the soup right into the hot pumpkin and bake for another 5-7 minutes, just long enough to heat up your favorite variety of Good Natured Soup. Mini Caramel Apple Pie Taco Boats

Take game day to the next level, and when I say next level I mean desert! Old El Paso is so much more than tacos, the recipes are endless, though a soft taco is top on our list, but I think I scored big with this one, and might have found a new favorite with my mini soft taco boat Caramel Apple Pie recipe! The Old El Paso mini taco boats were at our local Walmart and they are the perfect size dessert to make for our up coming party.
We like to call them simply mini Apple Pie boats.
 The recipe is so easy and quick to make for game day or any get together.
one package of Old El Paso mini soft taco boats (contains 12 mini taco boats)
one 15 ounce can of caramel apple pie filling
1 cup cooking oil (only for coating taco boats, you will not use it all)
1 cup granulated white sugar
1 Tablespoon cinnamon
 for crumb topping:
1/2 cup sugar
1 tsp cinnamon
1/4 cup flour
1/4 stick of salted butter
1/8 cup quick oats

1. coat the Old El Paso mini soft taco boats with cooking oil (we used a canola and olive oil blend).
2. cover it in the cinnamon sugar mixture
3. place on greased baking sheet and bake at 375 degrees for 15 minutes
4. immediately fill each boat with the prepared Caramel Apple pie filling 
(I used one can of 15 ounce caramel apple pie filling)
5. cover with crumble topping mixture (flour, sugar, cinnamon, butter and quick oats)
6. back in the oven at 375 degrees for 20 minutes
7. remove from oven and serve

We like them served up with a scoop of ice cream and some football.

I’ve even made an apple pie lover out of my hard to please southern belle and devoted cake eater.

Halloween Costumes of Years Past

Looking back at through old Halloween photos is always fun. I love making the kids costumes and sometime they make their own, we all trick or treat together and now that they’re older and I can’t sneak chocolate out of their treat bags, I have to dress up and go door to door, to get my chocolate fix. Last year I was a VooDoo doll, this year Mexican wrestler.

Look how cute my little knight was guarding his princess from the dragon.

Homemade bat girl and Newsie, she was able to stuff a lot of candy in that newspaper carrier bag.

Homemade pie and rain cloud, left me with no finger prints, I could have stolen candy out of their treat bags that year and gone undetected.

Quick and Easy Poached Eggs in Tomato Sauce with Feta Recipe (Shakshouka)

If you need a quick yet delicious meal in under 30 minutes, Shakshouka is a very traditional dish, perfect for breakfast, lunch or dinner. Just simply a few pouch eggs over tomato sauce and topped with cheese. It goes great with pita, tortilla chips or mini toast squares to scoop up every bit of Bertolli sauce.
Heat Bertolli sauce in a large saucepan over medium heat or 6 minutes in the microwave, stirring occasionally. I chose the Bertolli five cheese and the Bertolli tomato & basil sauces for my Shakshouka. (My kids were so enamored with the sauce!)
Pour the sauce into a baking dish or you can used a pan that goes from stovetop to oven.
Now crack the eggs onto the tomato sauce, then cover the pan with a lid of tinfoil tent and bake at 400 degrees for 15-20 minutes.
Top with feta cheese, basil, paprika, black pepper and oregano to taste.

Easy meals for eating with Braces

The big day has finally arrived and after 3 years of waiting, the braces are on! Well the excitement faded fast after we realized chewing was going to be a challenge if not almost impossible.

I am so looking forward to seeing this boy smile again, his teeth had protruded so far out, that smiling was difficult. 28 is the magic number! I wonder how different he will look in just over 2 years, boys change so much between ages 12 and 14 years and so does their appetites.
There’s definitely many more meals to prepare as the kids grow, bigger the kids get the more food I’m cooking.
