Mini Caramel Apple Pie Taco Boats

Take game day to the next level, and when I say next level I mean desert! Old El Paso is so much more than tacos, the recipes are endless, though a soft taco is top on our list, but I think I scored big with this one, and might have found a new favorite with my mini soft taco boat Caramel Apple Pie recipe! The Old El Paso mini taco boats were at our local Walmart and they are the perfect size dessert to make for our up coming party.
We like to call them simply mini Apple Pie boats.
 The recipe is so easy and quick to make for game day or any get together.
one package of Old El Paso mini soft taco boats (contains 12 mini taco boats)
one 15 ounce can of caramel apple pie filling
1 cup cooking oil (only for coating taco boats, you will not use it all)
1 cup granulated white sugar
1 Tablespoon cinnamon
 for crumb topping:
1/2 cup sugar
1 tsp cinnamon
1/4 cup flour
1/4 stick of salted butter
1/8 cup quick oats

1. coat the Old El Paso mini soft taco boats with cooking oil (we used a canola and olive oil blend).
2. cover it in the cinnamon sugar mixture
3. place on greased baking sheet and bake at 375 degrees for 15 minutes
4. immediately fill each boat with the prepared Caramel Apple pie filling 
(I used one can of 15 ounce caramel apple pie filling)
5. cover with crumble topping mixture (flour, sugar, cinnamon, butter and quick oats)
6. back in the oven at 375 degrees for 20 minutes
7. remove from oven and serve

We like them served up with a scoop of ice cream and some football.

I’ve even made an apple pie lover out of my hard to please southern belle and devoted cake eater.

Schools hold a lot more than books, they hold memories and years of friendship. We stopped by their old school yesterday, it’s been closed now for about 5 years, if efforts to save the county schools money. A banner hangs above the entrance “Bringing Back Our Neighborhood School, a Community Effort”, I hope we can, it was the original high school, later turned into the K-1 Center, and a place where my kids went to their first day of kindergarten, there will never be another like it.

 The 90 year old school now sits in a state of disrepair, tall weeds take the place of children, shadowing over the benches where my kids wait for me to pick with big smiles, excited to tell me all about their day. It brought tears to my eyes to see it this way. If only there was more ways to fund the school when taxes aren’t enough. In a perfect world schools would NOT have to close, but until then I’ll keep eating my yummy General Mills snacks (I mean the kids will) and clip Box Tops to help our schools. 

5th, 6th, 9th and 11th graders… they grow so fast!

Big brother really misses his school, hugging his sister as he talked about his former teacher and her cupcakes. I miss our morning bike ride. watching him head down the hallway, and hearing him sing his way to the classroom. 
The elementary was moved just a mile away, but my kids never went to the new school, I ended up homeschooling for the next 6 years after it closed. This year marks our 3 full year back in public schools and funding here in Alabama is always a issue.

Local businesses like Walmart help support our school and we as a family do what we can by collecting Box Tops and volunteering.
Any excuse to buy yummy snacks from Walmart to fill the pantry and their lunch boxes.
My intermediate school kids love Box Tops! They have a contest at their school, which ever grade collects the most gets a party at the end of the year. Walmart’s 5-for-1 Box Tops initiative will make it a whole lot easier to win!

Rolling our way Back to School

This year is going to be more of a challenge than ever! If it wasn’t a feat juggling 4 kids in 4 different schools now we added a broken femur into the mix and under strict doctors orders of no crutches, so he can only use a wheel chair to keep the pressure off his leg, it’s one heavy cast! 

Now that was tough, we spent the better of 20 minutes just to get him in the minivan and another 10 minutes to get into the store! But the fun a school supply shopping was distraction enough from his perdicament , at least for an hour.

We ended up at Walmart in hopes of finding everything for our Back to School needs. There’s no going from store to store like in previous years, he’s gets exhausted easily, so we’ve taken on the challenge and are going Back to School Like A Boss….Walmart look out, here we come!

After making it safely to our point of destination the girls had a great time maneuvering the wheel chair through the store and I don’t think he mind a bit being chauffeured around. Pens, pencils, markers, folders, Viva paper towels and Kleenex tissues topped our list. 

The bigger challenge will of course be once school starts and getting to and from classes, being the new kid means he won’t have any “old friends” to help out the first couple days, but I’m sure he will make some new ones pretty quick here in Alabama. Plus he’s looking forward to filling up his cast with signatures from all his classmates and teachers

. Better pick up some Kleenex, there’s bound to be a few tears while he makes the big adjustment and the kids love collecting and bringing in the Box Tops.
